From Amaliada, Greece to Your Kitchen
Our olive oil comes from Amaliada, a region in Greece known for its ideal olive-growing climate, rich soil, warm sun, and sea air.
We use 100% Koroneiki olives, often called the queen of olives, prized for their high polyphenol content and bold, fruity flavour.
The olives are harvested at peak ripeness and cold-pressed within hours to ensure purity, low acidity, and exceptional quality.

Ultra-Low Acidity (0.1%–0.6%). Why Low Acidity Matters
GIS ERGON Extra Virgin Olive Oil is produced with an exceptionally low acidity level of 0.1%–0.6%, a key indicator of freshness, purity, and superior quality.
Acidity does not affect taste or sourness. It measures the level of free fatty acids in the oil, which increase when olives are damaged, overripe, poorly stored, or delayed before pressing.
Low acidity is achieved by harvesting healthy olives and cold-pressing them quickly after harvest. This careful process preserves the olive’s natural structure and prevents chemical breakdown.
Low-acidity olive oil offers a fresher, fruitier flavour; peppery, grassy, and herbal notes; and higher levels of natural antioxidants (polyphenols). Higher-acidity oils often taste flat or greasy and contain fewer beneficial compounds.
While the legal limit for extra virgin olive oil is below 0.8%, premium and competition-grade oils typically range between 0.1%–0.6%. Oils at the lower end of this range are rare and reflect early harvest, perfect fruit condition, and rapid cold pressing.
When choosing olive oil, look for extra virgin olive oil with a stated acidity between 0.1%–0.6%. This range is a strong indicator of freshness, careful production, and premium quality.
